Everything is a combination of grimdank and a linear beat em up.
I kinda liked Asscreed because you could scale historical monuments, but going through procedural generated landscape gets repetitive fast.

Well I don't see "adventure game" anywhere in OP's post but yeah, there are many other N64 titles like Spyro which didn't get posted so OP is legitimately not looking for platformers I guess? Then again being a platformer and focusing on exploration aren't mutually exclusive.

OoT had an adventure world larger than any 3D game before it. Complaining about it not being more lively is like bitching why nobody was able to pull off something like The Witcher 3 in 5th generation. The technology just wasn't there yet.

I don't know about lively, but what's definitely atmospheric is Soul Reaver. Lots of block puzzles though but the level design sometimes blows my mind and there's a lot to explore.

This is the key word. The field is a place, a single place, there's tons of other shit in the game's world and I have no idea why so many people have a hate fetish for this one area in the game, like they expected the field to surround everything else instead of being a single area that happens to connect a bunch of places and are disappointed that this one area wasn't what they were expecting and ignore everything else that makes the game interesting.

Oh definitely, but they didn`t go overboard into edgy territory unlike MM and Dank Souls where its nihilism incarnate the game. The attachment you got to the peaceful Hyrule as kid Link made you care more for its restoration.
