How hard is it to do a living dex? How much time should one take to do? Anyone have one? It seems useful for when the new games release you don't have to catch any of the old mons.

I have one. But I started back when leaf green and fire red were new and did it every gen since then, so it was like just dedicating a few hours after I finished each new game to updating it.
Now in days you can just trade from a lot of them online anyways though, so it shouldn't be all that hard.
Its easy for the most part.
You might have to work a little harder for event legendaries
I've had a living dex since Gen IV but starting with ORAS, I just decided to scrap the base and middles and only use full evolutions. So it goes Venusaur -> Charizard > Blastoise > etc. Obviously, single stage and no-evo mons stay in their places. Like Lanturn or Snorlax.
