I tead the rest of the reddit thread, it is defintely random.

Common consensus there was that it was random but only to a point and differed person to person. If person 1 evolved a flareon from a dig Eevee then all future dig eevee would be flareon, however, if person 2 evolved a vaporeon from a dig eevee then all future dig eevee would be vaporeon.

Onviously this is all anecdotal and theoretical. Chances are, it really is just random.
