Besides Remoraid and Octillery, is there any Pokemon that changes the whole phylum/class on evolution? I mean, because i can totally see this evolving into an actual hummingbird instead of a hummingbird moth.

Tynamo starts off as an eel and ends as a lamprey. I'm not too keen on evolutionary biology, but lampreys are pretty unique for being jawless fish, so that's still a pretty big change, even if the change isn't vastly visible.
Chespin goes from hedgehog to prehistoric armadillo. The animals have nothing to do with each other biologically.

Yes I have. They live all over where I live, and I wouldn't mind one in Pokemon at all, but I've been wanting an actual fly pokemon since gen1.
I can't see why a hawkmoth can't be it's own separate pokemon.
