A gym that tests out the trainer's ability to actually think in battle. What works against one mon is ineffective against the next, and so on and so forth.

The only way this would really work is if the gym trainers rebattled you if left the gym and came back. Otherwise you could beat all the gym trainers, leave the gym and swap your dudes out for untrained trash and then decimate the gym leader. If you have to beat the gym trainers though, the Pokemon you have have to at least be as good as that.

Electric gym. But only two of my six mons would be Electric type. The other mons would be mixed attackers with some Electric moves and access to moves like Rain Dance and Soak.

Forgive me for one type but I actually thought of a dark typs gym. It could be in an alleyway and it was a city gang's hang out. All the trainers never battle you one on one. Its always more than one trainer battling you at a time. Like horde battles with trainers. It plays up on the whole, "dark type never plays fair" thing

Gyms based on stats instead of types. If you still wanted 8 gyms, there would be a gym dedicated to stat buffs, and another dedicated to debuffs.
E4 would be status ailments. Toxic, Burn, Paralysis, andConfusion + Infatuation
Status Effect Gym
Gym Leader's Pokemon have Paralysis, Infatuation, Confusion, and Leech Seed or Weather inducing moves

gadget gym
each turn you or the gym leader can select a gadget to use instead of a move
their effects range from inducing some weather or terrain effect, to arena trap, healing bell and the like. Maybe even full ps/status heal effect for all pokèmon on the field, which would make for some interesting tactics imho
a variation on this theme would be a gambling gym where a roulette decides the effect each turn, randomly

Horde Gym: You're up against 5 Pokemon with Intimidate. Good luck.
Co-op Gym: You and your rival fight against two gym leaders.

Metagross, Tyranitar, Salamence, Garchomp, Dragonite, Hydreigon.
Galactic Gym: A gym made up of the most curious Pokemon.
Speed Gym: A gym reliant on speed. Ironically, the last Pokemon is a slow Pokemon with Trick Room.

The theme is ancient gym leaders, let's see if someone is interested in these.

A friendship gym. All pokemon used are ones that need to evolve with friendship.
The catch? They have the full pokemon amie benefits to make life difficult for the trainer.

You know what, let's assume for a second that I didn't read ahead, and am totally caught off guard by this, with absolutely no hard counter. I don't have ANY wide-hitting moves, because I hate my life.
Assuming they are of a correct level, not that de-levelled bullshit from ORAS.
Let's go the extra mile and assume each one is using something different. Let's say
Mightyena, Gyarados, Arcanine, Arbok, and, oooh, Salamence.
Turn 1: Fuck. Fodder, or switch to it. Maybe status something. I happened to run, say, Thunder Wave, I paralyze Salamence becasue it scares me, and die.
Turn 2: No harder than a standard 5-on-one from here. Fastest thing is probably Salamence, I don't know base stats off the top of my head. Assume Arcanine has Extremespeed.
So long as you have a pokemon faster than the current fastest, once you get down to a 3-on one, with the shitmons left, you can probably tank out the rest.
Dark type gym.
You fight in the dark, and can only see your Pokemon and their HP. The opposing trainer Pokemon and their HP is hidden in the dark from you, unless you use a move such as Flash, that'll allow a glimpse at the trainer's pokemon or after said pokemon has lost all its HP.
Can still hear trainer's attacks, but won't be able to know if they've used items or not.
