Zodiac as a loose pattern works. Typhlosion and Delphox are more like cousins to the animals they're supposed to represent so it's not perfect.
The plants one is true. They're grass types, it makes sense.
The pre-historic one almost works but you could do that with almost any group of lizards.
4/6 water starters have obvious weapon/warrior motifs yes. Feraligatr and Swampert? Not so sure.

That's kind of how patterns work, they're not necessarily planned or exact. I doubt that even if it was intentional, they would be able to do it with all the change in staff that happens over the years.
If you drew proto-Cyndaquil as a mouse and someone showed you a better version that was an echidna, no one would cling to the pattern. We already got rats and dogs, so I'm glad they don't fit the pattern perfectly.

It's possible they were orignally going for a loose Zodiac theme. It's also possible they never were, but the dots aligned in a similar enough way that people saw a pattern where it wasn't meant to be.
And just because a pattern wasn't intentional doesn't mean it doesn't exist.
I guess all patterns are in the heads of fans, even if they have more concrete evidence.
All water starters are based on aquatic or amphibious creatures that don't exclusively live underwater. This pattern is true. That does not mean that it was intentional, or that it will hold true for 8th gen. A pattern is just a fan theory.
Sometimes they're obvious, sometimes they're insightful and intentional. You can even predict new things with some of them, but it's not a guarantee.

You can find fossils and prehistoric species for every group of animals in this picture except dragons. The grass starter "pattern" is the most retarded one.
If anything, Swampert needs to be the knuckles. All of his dex entries talk about his strong arms, in gen 4 he got Hammer Arm as a heart scale move like Flash Cannon was for Blastoise, and his Mega gives him Anchor Arms.
