Claws doesn't make something a crustacean. Crustaceans are segmented with carapaces, have two segments while insects have 3, 6-14 pairs of these limbs, most crustaceans lack antennae though those that have antennae have two pairs, and crustaceans are largely an aquatic-based subphylum with those non-aquatic species being largely dependent on moisture and living in moist environments.
Paras is part fungus and is thus not even a true fucking insect. It's not a crustacean.

Favorite Crustacean Pokemon would have to be Clawitzer, as Pistol Shrimp are my favorite crustaceans. Not a huge fan of Clauncher, though. Dwebble is a close second.

Unpopular opinion apparently, but I think you could get away with calling Paras a crab that is acting as a host to a parasitic mushroom.
If you look at it in real life terms:
When a Coryceps fungus infects an ant, it is still an ant with a fungus. However the fungus eventually takes over the entire organism and it is a fungus living on the carcas of a dead ant, and therefore no longer a living insect.

Because of this I've always considered Paras a terrestrial crab with a parasitic fungus and Parasect a parasitic fungus controlling the corpse of a terrestrial crab.
