80-100 is a good number.
130 new Pokemon with 25 Megas.
Feels like the amount added with Gen 3, but is closer to Gen 5 amount technically.
There was a relatively short amount of time between XY and SM, so I'm going to guess that the total amount of new Pokemon/new Megas is going to total out at roughly 100-110.
is it harder to create and animate 3d models than 2d sprites? I need to know to formulate my answer

Obviously it takes more time to create and animate 3d models, but seeing as the models GF makes are futureproofed that means that they don't have to model old Pokemon this time, giving them more time to work on new mons.

They're only needing to make a seventh of the models this time around anyway.
Assuming Amie returns that is a new set of animations outside of battle, but it's pretty much complete for 720 plus 100 odd forms/alt models.

I asked because gen6 added very few pokemon, but it's understandable because of having to model all 720 mons and design new megas as well
my bet is we're getting around 100 new mons, megas includedor maybe Gamefreak will hear my prayers and forget megas ever happened
I hope it's just enough to end the National Dex on a nice number. Even if it means a ridiculously small number again.

I'm predicting this Gen will get the Dex number into the early 800's, right now we've got about either 740 or about 742 depending on the amount of evolutions Nekkoala, Iwanko, and the new regional bird have. So currently we're nearly half way to getting to 800.

Like what? 825 would be a good number, it means 103 new Pokemon, which isn't too bad. Realistically the national dex will probably get up the early 800s, like 810 at most. 806 if I had to take a wild guess.
