Why do starters always have to be fire/ water/ grass? Aren't there another three types that can work together rock- paper- scissors style?

Theres still a few left that I cant think of.
It's tradition, and some traditions should be kept.
You could also go:
Steel/Fairy/Fighting
Dark/Psychic/Fighting
Fire/Steel/Rock

the only good tradition is adead one
There's technically no other trio like W/F/G if I recall correctly, because those three resist the type they're effective against.
The other trios work on offense but not on defense.

Fire/Steel/Rock and Steel/Fairy/Fighting work just fine.

dark/psychic/fighting does not work because dark has a straight up immunity instead of a resistance

Fighting/Dark/Psychic is not a true rock/paper/scissors due to dark being immune to psychic, not resisting it.
Neither is Water/Electric/Ground for a similar reason.
