Actually, there is! I got inspired by the "Red Paperclip" Story and decided to test my luck... I'm starting out with only a bidoof, and seeing how long it takes me to get a legendary pokemon... I'll update once a trade goes through.
One time i put a useless ditto up and said it haid 6ivs. Got a Yveltal out of it.

I don't have any crazy gts stories really. I jewed someone out of a xerneas when I had Y. It's foreign too so thats cool. Other than that Ive been using it to help complete the pokedex and get that shiny charm before SM come out
A while back I wonder traded out an old Slowpoke in a dream ball from BW2 and used the GTS to trade myself a newly bred one to evolve into a Slowking. Before I got the chance to trade it, though, I ended up getting traded someone else's Slowpoke... which happened to be my old one.

The absolute worst part of all of this is that you can't even trade the pokemon they ask for! I'm not sure if this is because people are too dumb to realize this, or that they want to flood the GTS with useless trades.

I definitely feel like I could get the most out of a ditto. It's one of those pokemon that are always in great demand, so if I happen to screw up, I can always trade my way back to a ditto and work from there... So I'll do that. With the rare candy you can aim a bit higher for a higher level ditto, or you could take the candy and just get any ditto
The other day i wanted a huntail so traded out a clamperl with a deep sea tooth and asked the other person to do the same. They sent me back a clamperl with nothing. Was pretty annoyed at them and myself for taking the risk.
Spent the next hour looking for a gorebyss to trade for one.

Literally happened to me yesterday. I was looking for someone to trade a graveler with (so we would both get Golems), and this fucking asshole trades me a Graveler WITH AN EVERSTONE!
This baffles me, but mostly because it forced me to ask the question: Why? There was absolutely no benefit to him whether I received a Golem or not. But he decided to be an ass about it. Fuck people sometimes, man.

Not gonna lie, although I did receive a LOT of help in the form of the Sandile->Chimchar trade, this has been a lot more straitforward than I'd originally thought.
Still pretty roundabout, but good to know this has been an almost completed experiment.

Well... If you want a legendary, your safest bet would be either the zoroark or the excadrill. They're rare enough that the average player won't have them and if they're at a high enough level (IE, lvl 60), I can see people trading a legendary for them... Make sure you breed them before trying anything! You want a backup plan in case you get a really shitty version of what you're looking for.
But if you want to be more adventurous, go ahead, go for a poochyena (but if I may, try doing a couple of wonder trades until you get something unusual. Almost everybody has a poochyena in one form or another, so it won't really have good bargaining power)

Middle easterners have it pretty lucky in x and y I think, for pokemon players. Hawaiians too, pretty much anyone with a rare Vivillion pattern. Even moreso if they have a friend safari with Vivillions.
If you're going to get a complete dex minus legendaries, and have a rare vivillion pattern, you can literally trade it for most anything aside form legends.

I don't know how good the results would be, but I wish there was a feature that lets you search for pokemon that ask for a specific pokemon you want to trade. For example, say I want to give away all my bred charmander. Instead of just giving them randomly away on wonder trade, I could send them out to people who are actually looking for charmander.
