Im wondering what kind of /naturestats I should go for. I know it has high def/sp def, but the rest of the stats are average.
I'm thinking maybe EV train it for hp and sp atk.

Go defence and then use power trick
add explosion...profit

yea explosion is a fun thing to bring to battles. I have a shiny solrock from wonder trade, it had explosion on it and I just rocking single battles with it.
Personal favourite; it's well balanced, so you can use it to at least somewhat fill in whatever slot you need. I have 3 typical builds:
<in game to replace starter>
jolly nature
252 Atk / 128 Def / 128 SpD
-e.q.
-stone edge
Probably hms.
<special tanky, typically doubles>
Calm or timid nature @weakness policy
128 Def / 252 SpA / 128 SpD
-ice beam
-ancient power
-earĂ¾ power
-cosmic power
And most splashable:
<singles / setup >
Jolly nature @ light clay
128 Def / 128 SpD / 252 Spe
- light screen
- reflect
- trick room / rapid spin
- explosion
If you go trick room, swap its Spe into Atk and go brave or relaxed nature, depending on what you plan in dropping in behind its fresh screens.
