The only gens that had a distinct, standout type to me were gen 3's Water, gen 5's Fighting, and gen 6's Fairy.

I would either be something average like Normal or Psychic for being OP.
II is either Dark or Steel- new types.
III is Water. End of discussion.
IV fits with either Ice or Ground, for the chilly mountainous location.
V is either Steel or Poison. American industry + waste or the artificialness/ruining of Pokemon it is for some people.
VI is Fairy. New type, French are fairies, etc.
VII is either Fire or Grass, depending on how the story ends up.

4 feels steely to me, steel starter and legendary (played diamond), steel fossil mon, lucario, very mountainous (ground/rock/steel). bronzong/magnezone/probopass are all pretty memorable as well
V introduced a lot of awesome bug types, first time i've felt the type viable, plus volcarona who is the champ's signature mon. genesect, scolipede, leavanny, gavantula, accelgor/escavalier

It depends on what you mean by "defined a generation"
Some take that as meaning the most prominent type from that gen.
Others would take it as the most annoying/dominating/prominent-feeling type of the gen.
Either way you cut it, Gen III is certainly Water and Gen VI is certainly Fairy.

I want to expand on this as I was going for an "overall feel" defined by type
Gen 1 feels pretty grungy, dirty, and unrefined with an interesting idea that started it all out. Poison, acid, toxins, volitile chemicals and whatnot are all pretty fucking hazardous, but they can be changed and adapted to do some pretty amazing stuff.
Gen 2 was a return to roots of sorts, a very organic feeling to it and heavy on the Japanese influence. It was like tea, earthy, fragile, but strong.
Gen 3 was a whole new ball game desu. The series became reborn almost as the feeling of the franchise shifted like the tide. Suddenly Pokemon were colorful and lively as they crashed into our hearts. a renewal of vigor the franchise that felt like a sip of cool fresh water on a parched tongue.
Gen 4 solidified the pokemon franchise in many ways. It was the first gen to introduce more than 6-8 legendaries and it connected us all around the world for the first time. The region itself felt grounded in reality while not being afraid to embrace it's spiritual nature.
Gen 5 was another revitalization of the franchise as they stepped into a whole new country to expand and explore. Like an industrial revolution, things seemed to improve at a near exponential rate, sparking interest in the pokemon franchise with both old and new fans.
Gen 6 felt very muted in comparison to each of the other gens, the colors were faded and the story was basic. In its attempts to feel grand and beautiful it ended up feeling empty and boring. Still it was enjoyable nonetheless and will see many years of play time in the future
As for gen 7, what with hype and everything I can't help but feel a burning passion for the franchise again. The forge of creativity is far from fizzling out and this is just the beginning of a long life for pokemon

1st- It was kinda meh, first game of them so not much to say. NORMAL
2nd- It was kinda cool and by far the best games, and had a couple of high towers as well as mountains. FLYING

4rd-Tfw you have to get through that fucking mountain every single time. ROCK
5th-Is there garbage type? No? Ok. Plot really good, the best of them all, but new pokemons are shit and i feel like this game is pretty empty. I'm going with GROUND
6th-Either Fairy because of easy bs for little kids or Dark because of the edgy Yveltal story
