No pattern so far between generations, as far as I can tell. Not in their types, or stats, or stances/bodies.
My guess: all the starters so far have had arms and legs and dwell on land (except Serperior and Torchic really, but still land animals), maybe they'll do something else, like make them all flying or all live underground or in the water or something. One part Flying, one part Ground, one pure Water for a Land-Air-Sea thing, kind of echoing the Weather trio.
I was wondering if they'd do Grass/Fire, Fire/Water and Water/Fire, but with Volcanion's gimmick, I do not believe they will do that for gen 7. Nor do I think they'll try another type triangle.

All three of them will be /Fighting-type based on the Chinese Zodiac. The Water one will have a special ability that always gives it a type advantage over Fire, Grass, and Fighting-type Pokémon. The Grass type will have Wet Skin, the opposite of Dry Skin. The Fire type will have Stall.
