What do you think the various organs/organ systems in various Pokemon would be like? What would be some organs/organ systems unique to certain Pokemon? What would their general anatomy would be? How about the cellular structure?

I imagine that they'd have certain organs being 'plant' organs, certain organs 'animal' organs, and hybrid organs that containing both animal and plant cells/or cellular hybrid that bridges the two/cells that can change between being a plant or animal cell.
