If anything, for a literal "this is a dullahan but in pokemon", Steel/Ghost would work better. OP's mon is a pokemon inspired by a Dullahan, and honestly I'd prefer that for Fairy-mons than mythical creatures just drawn sugi-style.

Apparently I didn't read very well.
I would love a fairy pokemon based on the frog prince fairy tail. He could start out as just poison but after being hit with sweet kiss, lovely kiss, or draining kiss he evolves into a fairy/poison type.
He could possibly be an alternate form of croagunk called croakking.
But the point is to have a much more masculine fairy pokemon that feels fairy without just being pink and cute.
Another possibility is to follow the Brother's Grimm story more closely and have the frog evolve by either holding a gold orb or being hit by a physical female pokemon's attack. We could also have a second pokemon who is fairy/steel based on the iron Heinrich that starts out with iron bands over a hear shaped on its body but then evolves to be wearing a suit of armor with heart cut-outs (something like the armored heartless from kingdom hearts.)

I stuck with the floating-armour archtype often used in JRPGs, but I did consider using the Headless Horseman legend instead at one point.
A chariot would be iffy to incorporate. The shell could be it, with the snail forming a quadruped, or even no legs but the stomach-foot frills flaring up with the whole pokemon floating.
But by then thats more just a magical flying snail, and the Dullahan source gets pretty muffled.

For the Minotaur mon, I was think a name that incorporates Daedalus, the man who made the labyrinth, and Asterion, the actual name of the Minotaur.

Its always difficult to get witch hats looking good for pokemon. Even with Mismagius and Murkrow they look iffy.
But the idea of a Goblin Shark thats actually its namesake, and thus, part Fairy, is a neat one.

The king Louie/cornucopia fusion in the top right was an idea for a 3rd stager, whose tail is so long it coils into a cone-shaped larder that it stores fruit in and sits in front of, making a berry-throne it lords over the prevos with.

We're not bothered if the Fairy types are spooky, really. We're just taking fairies from real lore and making them Fairy pokemon in the style Gamefreak seem to be taking them i.e. elegant and pink, or cheeky/cute (also with pink).
A pokemon based on the Spriggan.
Normally a mischievous little thief that has decent Sp. Atk, but just before using a physical move (most likely a punch), it changes into its giant forme with high Atk. If it uses shadow ball or something, it reverts back to the little one. All three eyes glow during attacks and they blink upon fainting.
Probably goes from like 2ft tall to 9 ft.

Thats exactly what I was trying to avoid, I didn't want anyone crying theft.
The gold was because I had the idea that these minos were bred as guards for temples and palaces hundreds of years ago, so they were gleaming to display the owners wealth.Also, seeing a colossal golden juggernaut lit by torchlight steamrolling towards you in a labyrinth alleyway would be pretty scary/awesome
As for the purple, it is pretty goofy but its there for two reasons

It can be cool/menacing, but I don't want to go the "obviously made 2 b kool" route GF sometimes does, so the purple ofsets that just enough.

I have no idea how you got "we want Ghost.02" from "taking creatures of lore and giving them the Fairy-type treatment". Ghosts are shown/said to be creepy and threatening in pokemon, these fairymons so far are just playful.

I'm honestly surprised they didn't do some sort of Fairy/Electric gremlin. I mean, I know Dedenne fills that type niche, but it would be nice to have a Pokemon whose design/concept actually has something to do with those types.
Failing that, we haven't had an Ice/Fairy yet, have we? I could see them going the Jack Frost route there.
