Earlier this week I had the amazing opportunity to spend the day at Nintendo of America's Redwood City, California location. Of course, I was forced to sign some paperwork on confidentiality and leave my phone by the door, but I saw some great things while I was there. If you've ever been there recently, you know how comfortable the setting is. There was quite a bit of information regarding the future Pokémon property, particularly Sun & Moon. I've blurred out my name and other personal information so nothing can link back to myself or my family.
Feel free to ask any questions regarding the Sun & Moon games.(I must add that since I was at a NOA location, I don't have nearly as much information I would if I'd been at their Kyoto location or even the Game Freak development location.)

I only saw a grand total of four designs, three of which mere concept art prints.
I was given a brief tour of the Marketing Division's offices where they handle what press kits they feed through to media outlets, stores, etc.
The (what I can strongly assume) starter Pokemon were as follows
>Grass hatchling. It had a seed for an eggshell that its head like a helmet.
>Fire Eel, or maybe snake. It had a yellow pouch on the end of its tail, and had something along the lines of flappers/fins or limbs.
>Water crab. Weird gray block on its back in place of shell. Saw this one the least, so my description is vague.
And the other thing I saw was a bird. Dark feathers, three legs, lots of eyes. Big in scale, too. It was from a distance so my description could be very, very off. But I'd safely assume this as a legendary of some kind.

Personal belief here, nothing confirmed. But knowing the patterns they've gone with before in designing starter Pokémon, some of their most recognized characters, I'd like to add my own expectations based on the designs I saw.
Grass/Dragon
Fire/Electric
Water/Steel
For the final evolution forms, I'd say.
