I think it's two opposing pairs. The knight and dragon are obvious, while the other is fire and water. She's a fire trainer but cool-tempered even when mad, while he's a water trainer who explodes for trivial reasons. They have traits normally associated with the opposite type.

Fairly sure you're still allowed to use the title. Characters like Cynthia introduce themselves as champions in other games even after being defeated in the past.

I wish we got given the choice.
You can either let the champion keep their title so you rematch the E4 again, or you can say "move over, i'm the champ now".
If you do that, you lose the ability to re-fight the E4 and instead you can go back to the champion room every few hours and fight some random, high-level trainer who has beaten the Elite 4 and wants to challenge you for the title. If you lose this fight you have to rematch the E4 and then beat the new champion again to regain the title.

Fairly sure being recorded in Hall of Fame is the same as taking the title.
Previous champs can still use the title, even if they are not the current champion.
