Just because the biblical behemoth was not a dinosaur does not mean Groudon cannot be based on a behemoth. Were the 3 musketeers literally a group of ungulates? Of course not. But does that mean the swords of justice aren't based on the 3 musketeers just because they are also based on ungulates? No.
Groudon, Kyogre, and Rayquaza are conceptually based on Behemoth, Leviathan, and Ziz. Their physical form is based on other creatures, but conceptually their basis is those Biblical monsters.

Yes. That's correct.
Sun boosts fire moves and auto charges Solarbeam. Groudon gets no STAB from Fire, and Solarbeam, while usable, uses it's weaker stat.
Meanwhile rain boosts Water, Kyogre's STAB, and gives increased accuracy to Thunder, which uses Kyogres stronger attacking stat.
On the flip side, P-Groudon now gains a Fire typing giving it STAB on Fire, and intense sunlight removes Water moves altogether eliminating it's dual weakness, where as Kyogre removes Fire moves which it already resists anyway, gaining less. As far as STABs go fighting each other, Groudon has access to Ground, hitting Kyogre's weaker defense while Fire and Water can be cancelled out.
