I like to make it so my main in game team can do absolutely everything; so that's six pokemon that can battle, cover all necessary HMs and excel in whatever sidegames there are (contests, pokeathelon, etc). It means I normally have a suboptimal team that has to juggle efficiency with power more.

I catch any unique pokemon species I encounter, and name them after music lyrics. It makes grinding fun, because I can hear the pokemon's song namesake in my head, and it incentivizes catching different pokemon. At least, it does for me.
