I came up with some Fakemon concepts a while ago specifically for the unused types.

Slatic (slapping+static)
Then it evolved into
Punshock (punch+shock)
And the last form was
Storumbler (storm+rumbler)

Poison/Fire - A tadpole that covers itself in a bubble of oil similar to an egg that it can ignite which evolves into a giant toad that spews huge amounts of oil from it’s mouth and sets it to flame with fire it shoots from it’s nostrils
Poison/Psychic - A Bacteriophage Pokemon that makes other Pokemon deathly ill by injecting pieces of it’s toxic being with tendrils it’s head is a gem-like construct made of psychic energy that protects it’s bacterial sludge
Poison/Steel - A junked, rusty old car or jeep that’s gained sentience, it’s grill became a mouth full of teeth and it’s front tires become metal claws similar to a crab.
Poison/Ice - A giant, menacing Goose Barnacle with an exoskeleton made of solid ice and long purple and blue striped tentacles. It can have either Toxic Touch or Ice Body
Poison/Electric - A Sea Anemone with a yellow and black color scheme and some new Clownfish Pokemon hiding in it’s dreadlock-like head tendrils
Poison/Fairy - A traditional fairy or nymph based around the Bleeding Tooth Fungus that evolves into a gaunt, witch-like creature with it’s hair hidden in black, sludge-like hair and covered in red pustules
Fairy/Dark - A vaguely human-like Punk Girl that leaves graffiti with her long, paint-dripping tongue
Bug/Psychic - A giant pink spider with a large abdomen that looks like a brain
Bug/Dark - An Assassin Beetle Pokemon that creates weapons and armor out of the pieces of slain Pokemon like a sword made from a Heracross horn and a shield made from a Cloyster’s shell
Ghost/Fighting - A Day of The Dead themed Skeleton that sword fights with a sword fashioned out of a sharpened bone
Ice/Fire - Japanese Snow Monkey Pokemon
Normal/Ghost - A mangled, horrific corpse-like Pokemon that hides under a bed sheet with a cartoon ghost face drawn on it
Fighting/Electric - A Kill Bill inspired Pokemon, it’s all female, has a black and yellow color scheme and it fights with electrified kicks, punches etc.

Ice/Fighting will probably be a snow monkey, or a bipedal arctic wolf (e.g. Ice Lucario)
A literal Schrodinger's Cat. It is Normal type and looks like a Pokemonized cat (a lat Persian, Glameow, Delcatty), but every time it is attacked it has a random chance to stay Normal or swap to Ghost type in which it looks like a ghostly version of its Normal self. As a Ghost type, every time it is attack is has a random chance to stay Ghost or swap back to Normal.
When it evolves (via level up or something) it achieves a balance and becomes either a pure Normal or pure Ghost type (as two split evos), depending on which state it was in when it evolved. However, there is some special item you can give it that, upon evolving, causes it to lock into a semi Ghost/semi Normal state, making it into a third split evo that is a dual Normal/Ghost type, with half of its body being ghostly and half of it being normal looking.
Of course that's a super complex idea I just made since it better represents the concept of Schrodinger's Cat. If you want to be simple just skip all the prevo and split evo nonsense and just make it a single state based on my final idea.
