Frost Ace would still be Ice/Fairy as would King Frost but Black Frost would have dark typing somewhere in there. Either Dark/Fairy or maybe Dark/Ice
Pyro Jack would be Fire/Fairy and there's also Jack Ripper would likely be another Dark/Fairy type

That sounds about right. Maybe Black Frosts stats are a bit too low though.
Jack Frost would mostly get offensive moves with the occasional non damaging one like Charm. He'd start with something like Powder Snow and a basic normal type move like Tackle. Ice Punch he'd learn fairly early on and would likely be an important move for him. Of course he'd also get Ice Beam and Blizzard down the line. Maybe Charming Voice too.
Frost ace would more offensive and would even learn a few fighting moves like Mach Punch, Reversal, Detect. He'd also get a Mega Punch or something.
King Frost would get an exclusive move that deals ice damage but also has a very small (10% or so) chance of instant kill. The power would only be moderate and the accuracy and PP would be low.
Black Frost would get a Dark type equivalent of Horn Drill, Fissure, etc.
Also I think Moxie might be a good choice for him.

I can also see Frost Ace getting comet punch or bullet punch, possibly Helping Hand too, to fit into the role of hero. Black Frost I can see getting a few fire type moves and being able to learn flamethrower and Overheat through TMs. King Frost could get more fairy type moves like Moonblast and have a fairly wide special movepool, and wish for healing.

That's actually how it works in the Dragon Quest games and probably the ideal way of defeating them. There are moves in some of the later titles that let you always crit but have low accuracy.

Give it access to annoying status moves and recover. Slimes tend to use Frizz and Heal spells, so maybe give it a fire type move that has low power but a really high chance of burn. As it evolves into Liquid and King Metal the Frizz attack can get stronger, ending in a signature move that has a fair amount of BP and high power but loses the ability to burn targets since it's defenses are so high and it's ability reduces normal damage to one except for criticals. To make it a bit more fair, it would probably have base 10 HP (max at 130).
It could have a split evo from Liquid turning in Platinum King Jewel.
