If Pokemon don't have parasites and stuff in them I would literally eat anything.
Like..
If magnemite or geodude were the only thing around I might put them in a soup just to see how it tastes (assuming I wouldn't get heavy metal poisoning)
I mean, people eat blow fish and that can kill you like crazy.
Worst case ontario I take an antidote after I get sick and am good to go.
Now that I think of if, people it the Pokemon universe don't seem to get that hurt by Pokemon fire, I'm pretty confident I could eat any Pokemon

Slowpoke Tail. It's so good that Team Rocket poached and sold them as luxury items.

As a bonus the Slowpoke is too oblivious to notice and will eventually grow it back. Make sure it doesn't starve in the meantime, and you could practically farm the tasty bastards..

Miltank, Tauros, Most fish pokemon, Torchics, Mareep.

Stantler and that new gen 5 dear.

Those would be the highly popular ones. But you can probably eat any pokemon that has meat.

The only safe ones are rock and steel types but we would kill them and use them for other stuff.
