umbreon is one of my favorite eeveelutions too but i'm not sure how good defensive mons are in single player since I've only used them i competitive.

They can work nicely against some of the more stronger pokemon towards the end of the game. Being able to balke some attacks and then use a status inducing move, or even retaliate with say counter or the special attack version of counter, can work nicely. It's not too dissimilar to competitive!

i tend to use a curse/payback set on my umbreon in competitive. idk if it learns those moves i heart gold but it can be pretty good if you get a couple curses off.
