A lot of those you can't catch until later, but you get Volcarona pretty early in that Desert Castle thingy. If you have trouble not having enough pokemon on your team, just catch temporary guys to fill it out, like Patrats and shit, box them when you catch a real teammate.

How I choose my in-game teams:
-Starter
-Flyer that doesn't share your starter's STAB
-A mon that backs up your starters weaknesses (Levanny beats Ground, Psychic, and Water for Emboar)
-A mon that backs up your starter helper (Electric types to beat Flying for Leavanny and Emboar)
-etc.
You can also choose some personal favorites from the dex. But make sure their typing is different so weaknesses wouldn't be shared often.
