In the Japanese version, it says something like "the chosen one" has to restore order. Ash becomes the "chosen one" simply because he's the only one who happens to be there and accepts the challenge.
The legendary birds are also referred to as actual gods that control the elements, which is of course worked out of the story in the dub. They even added a line to Oak's explanation in the English version (while deleting several other lines) where he says that the theory of the birds keeping nature in balance is highly debated among scientists. In the Japanese version, he's pretty straight-forward with the fact that the birds are elemental gods.
At least the second movie dub didn't fuck it up as much as the first movie's did. The first movie has an entirely different plot in Japanese.
