Honestly i think they were going more for rooster than hen for blaziken (whereas torchic/combusken would just be chickens in general) & conceptually playing on pico de gallo (Fire) and cockfighting (Fighting). They could've done a better job making the crest more distinctly chicken-like, but I don't think it's unapparent.
The human shape probably has more to do w/ trying to give it some recognizably Fighting-type design elements than abandoning the chicken theme

Because Blaziken was completely phoned in. It was originally the design for Latias but apparently they ran out of ideas for Torchic's final form, so they just split their concept into two mons.

In order to be a martial artist, you need a humanoid body shape.
The only exception is the Muskedeers, who are swordsmen that use their horns as swords.

Off course to each his own and all that, but the specific problem I have with blaziken though is that it just looks so damn weird. I don't like hitmonchan's design either but you can clearly see its based on boxing style fighting.
They just dropped the ball on blaziken, they could have made him this big intimidating rooster that's gonna kick the shit outta you. But now it looks so random you can only guess what his design is based on if you see his prevo's

You can also base the design of fighting pokemon on animals that are known for their aggression/ferocity. Infernape and heracross are good examples of that.
