I personally think it evolving into Umbreon would open up the best plot opportunities.
For example, maybe it will be established that Serena really wants Eevee to become Sylveon, but she's too enthusiastic about the training and Eevee evolves during nighttime without enough of "Amie-love" for lack of a better term.
This might lead to Serena being disappointed and depressed and Serena and Umbreon will have to learn to like the new change and make good things out of it. Obviously, enabling Pancham to evolve might be one of those "hidden" things they can utilize from such an evolution.
But it's pretty obvious it's becoming a Sylveon so whatever.

Agreed, it's bad enough they make spoilers painfully obvious via exposition in the show (when Shauna describes the different Eevelutions, not only is Sylveon last but the camera lingers far longer on it). But then having official merch spoil everything, even if you'd somehow ignored all the signs?

I think it's safe to say that Water Pulse is gone without a doubt. Getting rid of Double Team on a ninja based Pokemon just seems stupid. Having two water type moves that are both special and long-range seems like a waste of a move slot. Not only that, but Water Shuriken fits the ninja theme better than Water Pulse did.
The reason why it still has Cut is fairly obvious as it allows it to have access to energy blades that take the form of swords, which a lot of Ninja's would use. Having it swap Cut for Night Slash later on is certain to happen as it upgrades Greninja from a ninja swordsman to a ninja assassin.
In the case of Aerial Ace It's name in Japanese is Tsubame Gaeshi, which translates to Swallow Return/Reversal. The concept for the move comes from the samurai, Sasaki Kojirou's famous sword technique called Turning Swallow Cut which was so fast it could kill a bird in mid-flight. As we've seen with Greninja, it can use Aerial Ace with both it's arms and legs which gives Greninja it's close combat aspect along with Cut.
