actually, IV stands for Inherited value, since it's decided based on their parents' IVs (for bred pokemon anyway, otherwise it's randomly generated)

There are also personality values that don't affect combat, but things like Unowns shape or Wurmples evolution

The Pokemon are given the stats and nature when you receive the egg. To do this you would have to save before talking to daycare guy then hatch then go back until you get a keeper. Might as well hatch them all

I don't nickname my Pokemon, but I nickname my hard drives. People also nickname their cars. There is a long history of this sort of thing. Like naming ships and referring to them as women.
Nick naming Pokemon is for nerds though.
