What do you think the pokémon world would be like if humans had never existed?

If you're asking if pokemon were the ones that took the same evolution route humans did, than basically I'll just say zootopia: pokemon world edition.
If not and just the same present world but just excluding today humans. The answer is a world of pokemon being....well pokemon like they are in present day. Maybe lesser extinct pokemon, more places for them to live, or less human related involvement stuff like kadabra/alakazam spoons and sawk/throh clothes styled as human martial art clothing? I don't know really. Pokemon don't really lean toward human existence and aren't a mandatory requirement for their life as far as I know. So it probably won't bee too different than the life they have in a world shared with humans.

Same with yamask and phanthump since one is a human spirit carrying a mask of its face when it was once alive while the other is a spirit of a dead lost child. Same could go with bannette because they are haunted dolls discarded by humans. Not sure about spirittomb. They are made of trappes spirits but they aren't specific if they are human souls and/or pokemon.
