One of the issues with Johto being filler hell was because the writers didn't know what to do when they changed their plans about the GS Ball.
With BW, it could potentially be improved if the writers were able to recuperate from their losses, and have Plasma as a threat throughout the series, rather than them being relegated to a shitty arc far along in the BW series.
Obviously people like Trip would still be shitty overall as a character, and Ash having multiple Pokemon seemed like a cool idea, especially when you think about how Ash is taking Paul's techniques into consideration, as if he's learning over time.

There is this strange sticking point I have with XY, where I don't understand why people like the anime right now, when it doesn't seem to be an improvement at all. I have watched a few episodes people claimed were good, but I'm still not sold.

I'm getting it from DP where he had Torterra, Gliscor, Gible, and Staraptor. He had a glaring ice weakness and none of the Pokemon that were weak to it could cover it.
At the least in XY's team the three flying types can actually cover one another well: Talonflame only gets normal damage from ice, Hawlucha gets normal damage from rock, and Noibat gets normal damage from Electric. DP only had Infernape and Buizel to deal with ice just as Pikachu and Noibat can deal with electric.

Ash didn't have Gible until much later in his adventure. His team is still half weak to Ice, so I will concede to your point. Just that, to me, I'd rather see trainers in the anime have more balanced teams, especially since we're not in the age of the anime where we can just say the writers didn't know what they're doing (IE pre-RS)
I also may be biased, since I don't really like anything on Ash's team besides Talonflame, but I can't hold that against him.

No, BW was shit from beginning to end. 2 episodes wouldn't have saved it. All it would have changed was that Plasma would appear as often as Magma/Aqua or Galactic did occasionally.
