You also run into the those odd games where one team has smurfs or some really high leveled player while everyone else is silver/bronze. No, each champion was built with one of the five specific ideas in mind. A champion may simply borderline two categories. However, when distinctly defined, it is always one or the other.
It's not just the AD carry mains that may call a fighter a tank. Fighters ARE tanks. The fighter subcategory is just the lower end of the "tank" category where it borders Assassins.
Essentially, the 5 categories are split into subcategories, but they still fit those 5. A Juggernaut is a tank, a Fighter is a tank. A brawler is a tank. Assassins are Assassins. Mages are mages. Assassins do heavy burst damage to single target. Mages do lots of damage split up among multiple targets (as their defining idea, at least).
Assassins may be CLOSE to the edge of being a mage (like how Diana hits multiple targets with Q or how Kassadin hits multiple targets with R and E) but they're still assassins.
