Mercedes will not become your beloved if you talk to any NPCs with max affinity after her. What this means is that after the quest where she disappears from the game, you have to avoid speaking with the other NPCs unless you really, truly, must. Sadly, this includes quests most of the time as well. I recommend you give Mercedes the Arisen's Bond just after the duel in Pride Before a Fall.

The other major beloved quests don't necessarily max out their affinity. If you give them liquid effluvium before doing the last parts of their quests, you can easily keep them from becoming your beloved. I actually got Mercedes my first playthrough in spite of not using liquid effluvium, while still finishing all the potential beloved questlines.
This may have had something to do with how I kept tossing Aelinore into sewer water, but I'm not sure the game is that smart.

I... honestly can't believe I remember my headcanon in that much detail, it's been over two years since I finished that playthrough.
It's a bit cliche, I guess. I just love the idea of Mercedes as someone who keeps trying even though it's difficult for her, and then just as she's been beaten down to the point where she's considering giving up, getting the encouragement to go on trying from the Arisen.

That's not too bad.
I get the feeling that Mercedes WAS supposed to get more character development but didn't because of time constraints.
Even if you don't get her as your beloved, she seems very eager to become stronger and come back to actually help you.
I wish it were possible to have her in your party during post game, taking the space of a pawn of course, but accompanying in your adventures and growing stronger instead of just waiting around in your house but still wearing full armor for some reason.
So I guess the Arisen is the Lion to complete a Chimera?

I wish other Beloved who are warriors will fight by your side or travel with you. Like Quina who will heal and cast boons at you or Mercedes thrusting enemies with her rapier

Yeah, there really needed to be more character development of all the intended beloved-candidates post-dragon. I feel like Madeleine is the only one that really reached some kind of self-actualization before the final battle. Maybe Valmiro too, a little.
