It depends on why you liked DS.
Dragon's Dogma is significantly faster than Dark Souls, and stamina management in combat is not quite as strict or important.
A good reference for whether or not you will like this one is if you liked Monster Hunter and Devil May Cry, since in some ways this game is what would result if you combined those two.
A common complaint about Dogma is early exploration and how you do need to do a lot of walking, but it soon becomes a non-issue.
It's almost sad that none of the other fights in this game are as directly cinematic as the battle against the dragon himself. So many different awesome sequences, I was really hoping Daimon would be the same.

Is there a particular place that's best for exp within Bitterblack? I sort of just repeatedly punch things in the Rotunda of Dread since the stuff in there respawns, but that gets a little tired. My weapons aren't all that great either, but the lvl 3 cursed weapons are rare enough and don't really give me what I need.

I have 2 save files actually, in my main account I'm already at max level.
My pawn is a Sorceress, I change my own vocation pretty much every time I play. I did not min-max at all, but since I switched vocations so frequently it seems I ended up with pretty well rounded characters, with a good amount of HP, defenses and attack.

I never knew about minmaxing until I hit level 120 and I recall switching vocations a lot pre-100 (Assassin to Fighter to Sorcerer to Strider and so on). So i hear often that Caster/Sorcerer are only good for pawns and incredible boring to play as an arisen.

Mage is the support class which is boring to play in a game like DD where actively participating in combat is the main draw of it.
Sorcerer has fun combat spells, but it's mostly just you standing still and charging a spell for 30 seconds and then casting. It's not exactly "boring," just not a very active role compared to the other classes. You also miss out on a lot of fun things like climbing enemies.
Really you should just try it for yourself and see if you like the caster classes any, everyone is different.

Mage is just a healer. Sorc is immensely powerful and showy as hell, quite possibly the most unique and fun magic in any RPG. But it can be a struggle to actually attack, you might end up "sniping" from a distance. Albeit with a gigantic tornado or a rain of meteors that explode wonderfully. Still lacking in mobility.
The floating with your staff is not bad, can do some melee with it.

Mage is a support class and is somewhat boring in my opinion.
Sorcerer, which is my favorite, is actually a little boring I have to admit, but the fucking damage is CRAZY immense - like insane nuking power. Furthermore, it has some support spells like curing petrification, restoring lowered attack and defense, and status ailment inflicting spells. It's not fast paced as an assassin, but you have no idea how many buckets I cum when four meteors come crashing down on a boss.

I'll admit a huge bias but yes. The memes are there because it genuinely gets a little crazy. If you're looking for a hack and slash with incredibly tight gameplay that leans heavily on combat scenes, has a high ceiling, and rewards doing well, dmc is your bit. Mostly gothic atmospheres, neat enemy design, great soundtracks. 4 has arguably the best gameplay and is where a lot of people new to the series start since it's still beautiful and runs on a potato. 3 is one of the most perfect fucking games ever. Sometimes people struggle with one. 2 doesn't actually exist, it's a meme perpetuated by capcom that even a brown French woman couldn't save.

I'm just hoping all of the stuff I put on him made it through. I sent him off with a full outift + a ring, but I think the inbox has a limit, so I'm always concerned that pawns will show up half naked if I re equip them and their arisen already has gifts in the inbox.
You might try out Exodus Slash with Balrog, or that ability that charges forward, instead of War Cry. I've heard good things about them. I don't remember if he had Corona Slash, but that's also a good one. Overall he did what warriors are meant to do: soak up tons of damage and stagger things. He even managed to get a few hits in on Death.

If you feel a foe is beyond your means, there is no shame in fleeing.
But seriously, part of the game is learning that it's OK to run away from some battles, particularly at the beginning.
The lizards down the well become beatable if you cut their tails first, otherwise yeah, they are extremely resistant to damage. The Ogre under the pawn guild is also a bit hard for starter gear, but it's possible to have him fall to his death.

In any case, have you balanced your party with at least one magick user? It's very difficult to damage it with physical damage early on but spells can do the trick, though it will still take a while.

In that case I think you could benefit from having one or maybe even two Mages in your party, they are very good early on.
Just make sure to never hire anything that has Guardian or Nexus as their inclination. At all.
Since you are the Fighter and you need to attack up close all I can say is don't get greedy with your hits.
