Also, this might be something akin to the character creator in GTA Online where you choose your parents, and depending on who you choose, your character will have different skin colour and facial features. You can also choose who you look like the most.
This is also in line with the family thing. If they are indeed settling in an entirely new galaxy, getting entire families would make sense. Like a generation ship, but you put everyone in stasis for the duration of the travel.
