Assuming you're talking about Toblerone's turrets, the range isn't infinite, it's apparently "40 metres".
The problem is that it seems like most of the levels rarely have areas with a line of sight greater than that, and if they do, it's never in a position you'd put a turret.
I think the best way to adjust the turrets would be to give them a lock on time or take time to pivot, so they can't just instantly snap around 180 degrees and start shooting you.
Possibly adding a critbox on the back of the turret would be good, like Bastion gets in his sentry mode, it'd encourage people to actually try to get up to the turret instead of everybody just trying to snipe it.
