I know that you group them then alt click through the enemy, but when I do that they dont charge, they just run at the same pace towards the enemy, they dont do the jump and pounce at the last moment thing

If you have patience and actually try to read and remember what the adviser says, you'll do fine.
I think the most important thing to learn is that battles actually require you to put your army into formations and that the battles are kinda 'realistic' in the sense of friendly fire is a thing, so try not to have your archers fire into the back of your own men and such.

Whatever you do with the northerners will probably be destroyed by the human kingdoms either way, so treat it as a training ground to level up your guys and build up money. As for general gameplay, you have to kind of be a huge coward as Chaos. When the stacks start coming at you, click on them to see their movement radius and run beyond it. When you get some breathing room, raid or go after undefended settlements. Stay on the run and hit where you can.

In my VC campaign, the Greenskins have taken all of the south. The only dwarfs left are the little pocket kingdoms around Empire borders. One of those shits kept declaring war on me despite not being close enough to actually send an army, so they'd just pay me for peace a few turns later. Until one of these wars resulted in them inviting the greenskins to war with me too. Now I've just started fighting off the first few waves of Chaos in the north right as Grimgor and his boys started sending armies up from the south (after declaring war on the dwarfs that got me into this fucking mess).

The different lords have different starts. Sigvald allows for faster horde growth while Kholek is really strong. The different army compositions and different powers each lord has results in your opening moves and your overall campaign taking a somewhat different course each time. The factions are generally diverse enough that "muh five races" is a dumb argument to make.

doesnt change much when surrounded and loosing units quickly crumble and are made useless, in fact the regular units often hold out longer, since they just stop routing and come back to fight

and thats the only one that plays differently, all else have their top tier stacks structured the same. Its especially noticeable in MP, where the meta is actually very similar to attila, only more cancerous because as I said shock troops are just as armoured if not more armoured then generic ones
you know what the most common tactic for attila was? Here is the most common one:
>pick a faction with 2 handed shock (burgundians were popular because of this, but nords work as well)
>spread a spagheti line of shit units in front of them
>put some cav on a flank
here is what the most common TWW online army you will go up against, thats not relying on sniping your general:
