Could someone PLEASE explain parrying at high levels to me?
I mean I'm trying to practice parrying in SL120 pontiff duels, even using the scumbag caestus... and I just can't parry shit. No one falls for it, and most times they'll just use a fucking 2H ultra weapon or some unparriable weapon art shit on you. Then you throw in figuring out the different delayed timings of different weapons and lagg and... yeah.
I mean is there actually a method to the madness here? Or is it literally just a matter of "oh yeah you can only parry against lower level people who are bad at the game and R1 spam you with a longsword"? I'm questioning why I should even bother at this point, dual wielding a fast offhand-weapon seems far more useful, hell even a fucking black knight shield for blocking.
I'm asking how do actually do this shit consistently at SL120, if it's even possible. Literally no one will R1 spam you when they see the parry tool come out it seems, they'll just play around it endlessly until you're dead.

Also note that the fact that someone is playing around your parries is an advantage as well. If they roll and delay the roll attack since they think you'll parry it, just hit them in the face instead. Do that a couple times and they'll think you won't parry, so next time do. All about the mixups my man. Being unpredictable is the key to avoiding parries, and also the key to landing them.

training is a good idea but good parry should be unexpected. if all you do is parry spam then your opponent will take that into consideration. a good player will notice the instant you switch into parry gear and will adapt to that. The secret to parrying is to read your opponent or bait your opponent, basically you should make sure your opponent notice you're going to parry only after it's too late

The first parry of every match is the most important one because it can actually be a surprise depending on how you do it.
Like you said, lag makes things really difficult but not impossible. Just focus on learning every weapons moveset and it will be a lot easier to say, call someone's rolling/running r1 for example.
Parrying online is entirely about prediction, not reaction on all but the best connections. If you approach it with that mindset it becomes easier.

Besides, let's take two hypothetical scenarios.

After those dozen good games are on PC, nobody has any particular reason to get a PS4.

Any time there's a sale, people will think "Oh, I could play X game... and Bloodborne". There's an art to using say, a BK Shield as well. Similar to parrying, but a lot more consistent (mostly having to do with incorporating rolling/dodging to reduce the number of attacks you have to tank, and stamina management in general. Mostly a bunch of subtleties having to do with stamina management).
I use one when I play with the Drang Hammers most of the time and I'd be happy to let you wail on me, get you into a comfortable position that's close enough for me to unleash the fury. Also everyone becomes so afraid of the skill that they don't realize how hard one or two 1H R1's of the thing can be.
I just think an offhand rapier or BK shield is far more effective (and more importantly, consistent) than parrying in this game. At high levels, at least. If you're doing SL69 invasions then sure parry away, but in SL100-120 duels? Forget it.

Top tiers are estoc, red hilted halberd (and halberds/glaives in general), carthus curved sword and washing pole.

artorias of the abyss in terms of consistency, four great, unique bosses that are vastly different from the main game's bosses in terms of playstyle and appearance, and an organic, flowing level design with shortcuts in between areas.
Old Hunters is in second place, Orphan and Ludwig may top it out for boss battles, but Maria reiterates the similar hunter fight feeling, living failures are disappointing and as well, feel reiterative, and so does Laurence, who may also be the worst boss in bloodborne.
In addition, while Old Hunters level design was good, it suffered from not really feeling organic as a whole DLC.
In addition, the NPC's you find in artorias of the abyss are far, far more memorable than in the Old Hunters. Hawkeye gough is one of the most memorabe encounters in all of the games, simply because of his much different feeling dialogue and wonderful cutscene.
Crowns are good, but they should have all been rolled into one expansion, removing the blue smelter demon, lud and zallen and graverobbers.

Content of crowns trilogy itself is extremely boring. They somehow made less interesting trash enemies than in the base game and compensated them with extreme poise.
As for fun weapons, there's what, 5 of them that can be considered fun? Bone Fist is the only truly unique thing all DLCs gave us.

Scholar (as in the crowns trilogy, before someone spergs about it) wins by virtue of having the most content by a longshot, and by all of its content being up to the standards of the other game's DLCs. Those 3 DLCs combined saved DaS2 from mediocrity and combine to form almost triple the content of the other two games' dlcs.
Old Hunters is a close second because it literally doubled the number of weapons available to the player in a game whose biggest drawback was not having enough weapon options, and finally gave Arcane viable offensive tools. Also, Ludwig is easily the best boss in the entire series, though the other 3 aren't nearly up to the same standard.
AotA is really, really weak on content and the areas aren't great. It's carried by its bossfights, which are admittedly excellent.
