If you have an extra set of Catarina armor (so if you're in NG+ or a buttbuddy drops it for you) you can give that to Siegward when he's in the well and not buy the set from Patches. Siegward will then save Greirat in Irithyll, and Patches will also go to save him because he has Catarina armor. Then once Siegward dies and you get to Lothric Castle, Greirat will ask to pillage. If Patches still has the Catarina set in his stock and you send Greirat off, he will go and save Greirat. Thus, Greirat lives.

parrying takes practice, thats all. GENERALLY i find it helps to hit the parry just as they initiate the swing, compared to pve where you hit it right before the weapon hits you. i also find it helps to keep you eyes on their weapon
