Military veteran is best for a pure bt build since it has the lowest arc and lets you use bloodletter with no investment into str, but if you don't plan on using the letter professional is better.

The first time I did it I was cheesing him with the poison knife. It was actually pretty hard for me to take it on.
But now at the lower loren I learned some of his moves. I managed to bring him down to maybe 10% HP but I panicked and let him combo me.
It was pretty fun and I don't mind practising the dodges with him cause the location I restart in just requires me to run in a straight line to his location. I always get greedy tho!

I feel ya. This was my first souls game and ive been playing frequently ever since i got it a few months after release. It just hits everything i like in a game so well. Its the cosmic horror atmosphere, ye old settings, ambiguous themes and genuinely interesting characters that really seal the deal for me.
I liked it so much that i preordered das3 hoping for more of the same quality albeit different game. I like it but still haven't beat it once. I get to the cathedral of the deep, first swamp or so soon as the undead settlement, get bored, feel like im doing my build wrong, or any other sort of mild burnout - end up deleting my character and coming back to bloodborne, have fun in pvp or coop with bbg a bit - restart das3 from scratch - repeat that ad nauseam. Its not that i dont like the game, i really do enjoy it despie my bitching but i just cant get fully immersed like i want to be.
Some people say its because i haven't got very far into it. that i dont understand the mechanics and therefore make a poor build (magic as well as using the correct infusion especially is confusing but i dont want to ignore it) or that having not played any other dark/demons' souls titles, im missing out on key lore. But im sure its a combo of all that + the weapons ive come across seem boring and super similar across types compared to trick weapons. Im really having trouble find a weapon i like and want to commit to so i end up hoarding upgrade materials or wasting them on a weapon i dont like. Also shields are odd for me, coming from bloodborne, i often end up forgetting to block and just roll instead. Another thing is that while i can parry well with a faster dagger/shield/fist weapon im finding it way hard to parry with a bigger shield like the one the knight starts with and if theres any lag forget about it.
Ill stop now though as this isnt /dsg/ and im kinda drunken rambling an offtopic wall of text on the ps4 browser.

I don't think it matters, his attacks do arcane damage, but your best protection against him are the pillars in his area anyway.
All his melee attacks have secondary arc scaling I think, and they can be parried.
If you want to do extra damage you can try bolt/fire paper, but I wouldn't use it again once its effect ends since he has very high elemental resistance.
