The biggest difference is that Umineko was a narrative mess whereas Fata Morgana is narratively and thematically consistent and the way the individual arcs weave together on both an immediate and thematic level is nothing short of masterful.
R07 made Umineko up as he went along, whereas Fata Morgana is much better planned and much better executed.
To be honest the similarities between the two are superficial at best. R07 was half chuuni, half murder mystery, whereas Fata Morgana has no chuuni and no murder mysteries. They're completely different in theme and Fata Morgana actually uses motif instead of just repeating "WITHOUT LOVE IT CANNOT BE SEEN" over and over again.
