There has never been an entire weapon class added by a dlc before. Twinblades will likely not make a return because they were cut very deliberately.

They're made to do that. If you attempt to backstab them while they're able to move freely (eg. not animation-locked) they will instantly turn, preventing your BS and do a sped-up grab to punish you.
Silver Knights do something similar, and will pull an instant 180 and block if you try to BS them. In both cases, you have to wait until they perform an attack and punish with a BS while they're still in recovery, or they'll just prevent it.
Backstabs aren't instant in 3, so enemies have time to react.
