I would say /mhg/ is more reliable than good. The social status factor here makes it so that you can't play like an obnoxious random without risking getting called out for it eventually.
Rooms are also generally low hostility because the communication is better than it is with randoms.

He does need to unlock wystones to begin with, which is done during the apex steve arc.
However, you do the elder hall wyceum quests to unlock villager requests at the wycoon, and doing those is what actually unlocks the second wystone slot and the drive stone. That could also be the hanging point.

I did it with both SnS and LS.
At worse you go in from the front when he taunts, once you get the aura down once he never was able to get it up again.
And use the poison knives at the start.

So how do I git gud in this game? I've only really played P3rdwhich I've seen people say is the easiest in this generaland I'm having trouble timing my dodges and squeezing in damage in between the boss attacks. I don't cart much but I tend to spend a fuckload of time and most of my consumables on every boss I fight.
I'm currently at 5 star village quests and I've mostly been using the gunlance and dual blades.

You get good by spoiling yourself the damage formula and monster hotzones, then comparing weapon numbers and practicing with them.

It's like dark souls except instead of standing behind the asses of 90% of the bosses you stand either 45 degrees to the left or right of their asses or directly under them. It's not as simple as that if you want to kill them quickly, of course, that's just where most of the openings happen/most monsters have a safe spot.

MH is far less generous when it comes to iframes than, say, Dark Souls games. Try to position yourself so it would be easier for you to roll OUT of the monster's range.

I don't really have problems with stuff behind the scenes, it's the actual combat that gives me a hard time. Like monsters Barioth and other similar monsters, they jump and charge around so much that there's no way I can stay near their legs. I just end up running after them or sitting in block because I can't seem to do anything else.

No matter how much I try I can't seem to enjoy the baguette, at all. The juices gathering is a chore on quite a few monsters and the moveset just feels too floaty, hits everywhere and locks you in long as fuck animations.

Early patch dark souls 2 on PC (assuming you got 60 fps) had significantly fewer iframes (or rather, a smaller window of invincibility in milliseconds) in general than MH, but because the hitboxes were (memeing within the dark souls community itself because they were worse than in 1 aside) much tighter and lingered much less than those in MH it was still easier to dodge in that game. The soft cap for iframes in 2 is also 11, which is one more than e+1 in MH at 30 fps (though one iframe often makes a larger difference than people expect).
It's more about monster hitboxes than about iframes. MH has much harder hitboxes to dodge because, let's be honest, they're garbage- A tail soars three player heights above your head? You get hit; You're standing three feet behind a monster when it starts charging? You get hit and dragged in the direction of the charge; You cut off Garuga's tail and it does its tailspin while you're out of its reduced visible tail range? Hit and poisoned; You iframe through a kut-ku's fireball? You get hit after you're already visibly past it and dragged along with it; And so on, though it's mostly first- and second-gen monsters that are like this with third- and fourth-gen having both better hitboxes and movesets in general.
That said, e+1 and EE do make it a lot easier to deal with the bullshit and e+3 (18 iframes) almost feels as easy as 11 iframes in Dark Souls 2.
