Wrong. She gets flustered, yes, but foremost, she tells him "No! NO!". If she was as ready to hop on him as you say, wouldn't she be made happy by this? And yet, she says it's too sudden, too much. If she's unmarried by this point, it'd be even weirder for her to act like this. But if she's married, this could just be Flora's way saying for Jakob to stop, as he should know of her status, which is why Jakob is confused. The guy just hates mushrooms. It was a harmless note that could be taken differently depending on how you're viewing it.

Just more of the same. Even if you'd gotten over a crush, having a crush say they liked you all this time would definitely catch you off guard for a moment, no matter the circumstance.
This entire convo ended up just being a harmless joke on Flora's notable personality trait: Jumping to conclusions. She does it quite a bit throughout the entire game, so you can't say it's just for this moment, in hopes Jakob would pick up on her feelings, she does it in the M!Corrin S-Support. She jumps to the conclusion that Corrin doesn't want her as his maid anymore, to which she replies if she wasn't his maid, her life would have no meaning.
Finally, notice how Jakob says "There are many things about you that I respect. As long as you are here, I feel reassured." Pretty sweet line, right? How does Flora react? By saying "it's not often Jakob praises someone".
Remember when Corrin was nice to her? Telling her that seeing her happy was good? Her reaction was a snowstorm that she needed to cool off her hot feelings with.
