How bad of a place to start with EO would Persona Q be? I'm a huge fan of both SMT and Persona and I recently got my 3DS hacked (plus my r4 working with it, so I can pirate DS games as well again) and I'm pretty hyped to play Q.
After I do beat it, where should I go when I want some more EO? Should I just start with the first game on the NDS and play them all in a chronological order? Is the untold series a replacement for the older games? Should I just play them instead of the original NDS games?

Q is a decent way to learn some base mechanics! such as how binds and rows and ailments work, but Q is by far the easiest of the Atlus DRPGs because the binds actually do a lot more than they do in EO, and instead of actual build investment you can just slap whatever you want on anyone.
It's a good starting point, just remember everything is not the same.
