When they've finished their massive chain of gigantic sweeping AoE attacks, they give you a generous window of almost 0.1 SECOND (holy shit this game is too easy) to deal 1/10th of their health

Congrats you just beat the game because scaling weapons do not out perform a raw straight sword, spells do not out perform a raw straight sword, you will get hit because there are literally not enough i-frames in your roll to actually avoid stray damage from enemies or phantoms, so just stack up on health, mash R1 and chug, baby.
The good news is that Luck is now no longer the dump stat - after all, there are now five other dump stats!

Enemies literally attack too fast and frequently for you to dodge through their strikes and get close.
I mean you can dodge away, but then you're no longer in range to attack, so it's meaningless.
If you do dodge through and get a hit in, you either get hit by their next attack which has 1/4th the windup of your attack (and hits in a huge sweeping arc for no real reason). At that point they either get stunlocked to death because this is Bloodborne, or they just don't in which case you can no longer reliably deal with them without an extended poking match.
This game wants you to take the initiative and then punishes you for it. The only "gud" way to play is the same approach to every single enemy in the game and it's boring as fuck.

One thing I've found weird in DS3 is how fast you can suddenly pull your shield up. You can go from drinking and holding the shield button, to suddenly performing the block animation even though you didn't have your shield up to begin with, has it been like that in the older games ?

I am having trouble with the individual Watcher Firesword man, I can only mostly seem to get hits in after straight line sweep with the secondary fire attack he does, and occasionally after the leaping attacks.
Is he additionally susceptible to lightning or poison? I also have the Irithyll straight sword but the frost buildup doesn't even seem to factor or go off. Any tips? Using Caestus +2 got me closest to victory so far.

This means you need a weapon that outdamages every other weapon in the game and is faster than most of them.
As an added top kek: A Raw Astora's Straight Sword doesn't actually fall off in damage until you have about 40 of a scaling stat, and even then that's 30 points that could be in Vigor instead.
A fucking Raw straight sword does more damage for faster, cheaper and more efficient stat investment than a Sharp dex weapon.

Great axe has much better damage from what I've played with and it has a stun radius making it a pretty solid choice. The machete is probably equal in the sense that is has more "damaging" range and still has some stun area. I think it just matters on how you play.

Because the game is built around r1 spamming enemies before they attack since most enemies are borderline undodgeable with iframes and are way too fast and hyper aggressive.
Anything but a straight sword is just playing the game in a frustrating, badly designed way since enemies are too fast for your own attacks.
