Honestly, Dogs of War could be really fun if they did something different with them. Like, we take over a merc company with a base(s) in the Border Principalities or Tilea or Estalia. The base is like a mix between a horde and a city - stationary, but separate from a city. You upgrade it with special buildings like a horde, but it isn't an army itself.
You can recruit armies from the base and go around raiding wherever you want, but what you mostly want to do is hire out your army to another faction at war. One of your armies teleports to their capital, and more can follow if they pay for it, and you fight in the war as their ally. If you lead a siege, you can decide to sack the city and/or hand it over to your employer.
Your only goals are to make money, and expand the fame of your company. Victory conditions involve upgrading your base to a certain level, and/or operating full bases all over the map. You do have to protect your bases, though, making sure no hostile faction takes the region you're based out of. You also want to help stop Chaos from destroying the world.
...and I just realized that you meant that we would get Dogs of War as merc units or some shit. NVM, that seems really likely. A shame, I'd love to play Total War as a merc faction.

As Otomo you have access to gunpowder shit at the git go. You start in Kyushu next to all those sexy trade ports, and you have access to ridiculously overpowered Nanban ships, so money really won't be an issue.
The main issue though is the fact that being Christian makes everyone hate you. So Daimyou Honor and diplomacy bonuses are an absolute must to counteract that. Once you secure Kyushu for yourself you just gotta work on spreading that word of god around.

Chain shot is two iron balls connected by a chain
They will wreck sails. Slowing ships down (the white bar) really good if you want to take prizes or they're faster than you
Grape shot or canister is basically a shot gun, shit range but it will kill crew and affect moral but you need to get close to use it
Round shot is your standard shot, I think it goes the furthest. Punches holes in the hull more likely to sink them but also does damage to crew and cannons. what you'll use 90% of the time.

Round is normal ammo, good for punching holes in ships. Chain will destroy masts and cripple ship movement. Grape is like anti-personnel flak, won't hurt ships a whole lot but it'll fuck up the crew.

Some tactics with different shot types
Ships have a massive moral penalty if they have no mast, so chain shot does good moral damage. no one wants to be a sitting duck and most likely a ship without sails will surrender.
Getting behind a ship at close range and unloading a full broadside of grape in their ass will kill LOADs of crew and will also give a big moral shock.

Just be very careful about setting up your mid and late game with building stuff. Remember about the papermill up in Buzen that will give improved accuracy to all ranged units, and also remember Satsuma has superior metalworking that can give you some nasty heavy infantry.

Honor is important, Your daimyo has shit Honor. but with matchlocks early it shouldn't be a problem.
You'll also get a quest early on that will give you improved matchlocks so it might be worth while to wait for that quest to proc before going heavy on matchlocks (i think the conditions are to recruit a matchlock unit so by the second turn you should have it active.)
It can also be worth while to move your nanban port to buzen once you're established.

Winning heroic victories with your Daimyo is a good way to build his honor, which is important so you can boost your diplomatic relations as much as possible until you can get more cultural research done. A basic guide for getting a heroic victory is to win a defensive siege while outnumbered heavily. Depending on the difficulty you're playing at you may have to resort to cheesing the AI to pull this off.
Other than that, basic battle stuff:
Yari ashigaru are the lynchpin to every army. Yari wall stops all enemy charges.
Bows are OP as fuck. Whoever has archer superiority dictates how the battle is fought.
Samurai are strong but they actually work better in tandem with yari ashigaru than in pure samurai armies. Yari are the anvil, samurai are the hammer.
Cavalry is mostly useless unless you're Takeda, it CAN be deployed effectively but you can get along fine without it.
Matchlocks are effective only when they have a clear line of fire and can't be immediately bumrushed. So defensive sieges and during ambushes or opening salvos in pitched battles. Even in both these situations you generally only have a limited window where they are effective.

Latin is still ok. You get an osmosis bonus on all your provinces, so they convert pretty easily and stay high. Also you can use your food on the drinking halls etc.
