Get a good shield and always try to hit the balls between its legs and then put up your shield. The only move he can hit you with are the jump ones which you can see easily and the spin, if he spins and you have a shield up it should just stagger you and if he jumps you roll back a few times.

Armor isn't very useful. Poise literally does nothing, and you gain a defense bonus just from wearing armor in every slot, no matter how weak it is. Heavy armor in particular tends to have horrible defense to weight ratios.
For min/maxing, having low Vit is generally a good thing. The only real reason to wear anything but the lightest armor is for fashion.

I've been going through DS Lore and I'm wondering, I've always been under the impression that the The Witch of Izalith tried to recreate the First Fire in response to the First Flame starting to die, so she was trying to preserve the Age of Fire. But all the descriptions of her only say it was an 'ambitious endevor'. Is there anything that actually points to her acting in response to preserving the Age of Fire is it vague enough to think she did it just to have power?

The problem is, where your system is good, it's not being used by DS3, and where DS3 would actually use it (GPU) you have a pretty old one. That said, it should still run better than that.
People should also post their OS as well when they complain about performance. It's common for one person to say "I have X system and it runs like shit" only for others to say "I also have X system and it runs fine". So maybe it's an OS thing. Maybe it's other software like Fraps, I dunno.

farron bestsword is a utility weapon, you have to explicitly abuse its ability to parry and dead angle with the spin to make it a worthwhile choice
it has mediocre r1 in both modes and pretty sad damage output on top of bad scaling and inability to be buffed
never go for the third hit of the l1, only use the second l1 if the first connects and start practicing unlocked pvp fighting if you want to get the most out of it
