I have no idea about Fletcher, so I'll just comment on Hunter.
Hounding is the best anti-archer skill. Using it gives your pet a buff. When the buff is active, and a cloaked/hidden target is within its visual range, it'll drop whatever the fuck it's doing and chase that motherfucker. To the other side of the map if it has to, like a heat seeking missile. Once it touches the target, it kills whatever stealth it has.
Coursing is pretty good. Do not work on bosses and it can be resisted with Dispellers, but it's pretty much fire-and-forget. When there's an elite monster, have the pet Course it and just forget about it. I have never ever seen it resisted by SPR so I doubt you can resist it that way. People cannot do anything while Coursed, except use consumables. I wouldn't put more than 2 or 3 points in it because, even at the lowest duration, it's more than long enough to kill stuff. After the target dies, you cannot order the pet until the full duration expired, which is another reason you do not want to put too many points in it.
Rush Dog is the bread and butter. 5 second cooldown, decent damage, capable of AoE and 50% stun chance. Whenever you're not giving single target commands to monsters, you should spam Rush Dog. Just keep and eye on your SP.
Prohint. And this is actually really fucking neat:If you're a Scout, you can Rushdog spam while Cloaked and it does not reveal you.

Retrieve is like Coursing, but it constantly pull the target towards you. It has lower duration and a more expensive attribute, but you can use it to disable people inside Safety Zone and pull them out of it. Needs many points for a decent duration.
Praise is okay. Max level 5 even at higher circles. I always get 5 points in it but it's not really necessary.
Snatching is the ultimate anti-flying monster skill. When you use it, the pet will walk to point blank range of the target. It'll do the bite animation and apply a Damage over Time debuff over a small AoE area around the pet, only on flying monsters. The targets will take very strong DoT. The pet is not stuck during the period, so you can order it do other things during its duration.
I haven't tried Pointing since they reworked it. From what someone mentioned in the thread, it gives the pet a buff. What the buff does is apply a damage debuff to all targets around the pet with the Pointing effect. Might be worth trying.
I would not recommend running any build with Hunter as a starting character. Because pets do not get quest EXP, they're left behind very easily and will die to monsters all the time, which is annoying. Please get at least a level 120 pet first and then start your Hunter.

Any non-flying ones. Velhider and Hoglan, but also some rare pets such as the Panda and t he Hamster.
The flying pets are Falconer exclusive. That's the Hawk only currently, but we know from datamining that stuff like Owls will be added as well.
If you're a Falconer, you can have both types of pets out at the same time. However, the Hunter skills will do nothing to the Falconer pet. It only works on ground pets.
