Well, there are two reasons for that. Some characters have special finish cut ins in certain circumstances. If you're playing as Mifune fighting Hanzo, you'll get a special image. If you land a Team Ultimate Jutsu, you get a special image, and so on.
Alternatively, you may not actually be selecting your customization. At the character select menu, there should be an option to "Select Customization". This will allow you to choose from the ones you've set. If you just select a character, you'll be given the defaults.
