There are plenty of really good 3* servants that I definitely suggest lurking if you get them. FSN Cu and David are among the best in the game. Cu does not die and David can grant full team dodge and attack boost.

Not really. The huge problem with the focus on Sieg is that he basically doesn't have to struggle for anything he wants except at the very beginning and the very end. People would like him more if he wasn't part of such a huge chunk of nothing happening as he progressively acquires superpowers thanks to other people.
Like, if Darnic died at the end of book 3 instead of book 2, you'd have a much longer time where things were up in the air, instead of two and a half books of Amakusa being the main villain but not doing anything or interacting with anyone but Shakespeare and Semi. That would have meant that Sieg would have actually had to struggle and undergo some kind of hardship in order to free the other homunculi, instead of just arguing with an exhausted Fiore for five pages. He and Astolfo could have also had to really deal with Selinike, instead of Mordred just running through the scene and solving the problem for them.

Marik isn't even that bad as an endgame servant. High attack and monstrous HP, able to spam his NP to clear enemy buffs and dodges and can stun servant enemies. Once his NP gets interlude upgrades he'll be great. Remember how Vlad and Altera were seen as shit until they got their NP upgraded? Amakusa can quite easily become a lot better.

Alter Egos are powerful, even if they were gimped they would still be powerful.
Passionlip probably has an instant death attack with high damage, Presence Concealment A+, and a few other decent skills. Masochistic Constitution is something Nasu said is quite necessary for an RPG tank class fighter to absorb damage, so that skill probably raises defense.
Meltlilith's virus probably manifests as a large debuff for enemies, and her NP is also probably a strong attack and debuff. Sadistic Constitution on the other hand is suited for attack, so that will likely raise attack.
It'll take longer to figure out the ingame mechanics for the others.

Just Protea, Lip, and Melty counter each other in a rock-paper-scissor relation. Violet doesn't seem to be the weakness of another Alter Ego in particular, but Melty is her natural enemy (probaby due to alignments, personality, tactics or skills, not sure), and Kazura seems to be useless or weak in combat. Though Kazura maybe will work like Andersen or Waver thanks to her skills and NP.

Kazura could have "Heal One ally" skill, "Heal all allies" skill which is harder to spam, remove debuffs, and NP lets you revive one fallen ally. Which will be a rare gimmick that will net her on some teams, yet her attack and defense are abysmal
